Pigs in blankets
Serves as many as you need
Ridiculously easy to prepare and can be made ahead of serving. Simply remove from fridge an hour before cooking. A classic Christmas dish traditionally served alongside roast turkey
Contents
- 1-2 rashers of streaky bacon per sausage
- 2 chipolatas per person (at least!)
Method
1. If your bacon has rind, trim this off. Run the back of a knife firmly along the length of each rasher to stretch out the bacon and reduce the amount of shrinkage in the oven.
2. Take a chipolata and wrap it with bacon; if you like a curl of bacon around the middle use just one rasher per sausage, if you prefer fully wrapped use two
If you're preparing these in advance, wrap them well and refrigerate until an hour before cooking.
To cook strong: they need 20-25 minutes in a medium-hot oven, around 190 degrees C, gas mark 5. Lay them on a baking tray so they're not touching, and bake. They're done when the bacon is crisp (but not burnt!) and the sausages cooked through. You can keep them warm wrapped in foil until you are ready to serve
