Potato salad with shallots and dill
Serves 6 - 8 as a side dish
A simple potato salad with a fresh herby dressing. Excellent picnic fodder or part of a barbecue spread.
- 1kg new potatoes
- 3 tbsp red wine vinegar
- 1 shallot, chopped very finely
- 2-3 tbsp mayonnaise
- 2 tbsp chopped dill
- 1 tsp ground coriander
- Freshly ground black pepper
- Sea salt
1. Boil the potatoes in a big pan until tender, about 10 minutes. Drain and leave to cool.
2. Mix all the other ingredients to make the dressing and pour over the potatoes. Mix and serve.
